She first tasted the sweet-sour fruits in 2015 when a longtime customer—back when she was still in the fashion industry—brought her Asian "sweets." Fascinated by this tradition, she delved into fermentation, one of the most gentle methods of food preservation.

On her travels to Southeast Asia, she discovered farming families who had been cultivating and processing Japanese apricots, also known as green plums, since the 18th century. These families have been producing pastes, valuable extracts, and fermented specialties from these fruits for generations. Recognizing the potential of fermented fruit, she was encouraged by her customers to explore this field further.

The Beginning of Share

Before considering starting a company to introduce this magical fruit to the Western world, she sought advice from experts. Her research revealed that the Japanese apricot, fermented in its own juice for over 30 months, with its unique microflora and valuable enzymes, had been highly regarded in China for centuries for special purposes.

After further discussions with nutritionists and food scientists, she decided to bring her project to life. With the support of a business associate in the food industry, she was able to ensure optimal transport routes and high-quality standards. Collaborating with the farmers went smoothly, as fairness and sustainable partnerships are a central part of her philosophy.
